Humble Lime Pie

Limes and coconut make one cool summer pie

An adapted recipe from the "All American Bake Sale" book, this is one of many experiments with baking pies this year. I was in a hurry and didn't want to blind-bake the bottom, so I used ready-made puff pastry.

This is for a 23 cm round pie tin.
bottom:

  • 4 leaves of puff pastry rolled into a circle

filling:

  • 5 egg yolks
  • 1 tin (460 g) sweetened condensed milk
  • 150 ml lime juice
  • 1 tbsp grated lime peel

..and some grated coconut.

Method

Press the puff pastry into the pie plate. Trim the edges. Beat the egg yolks until a light yellow, then add the condensed milk. Mix in the lime juice, a bit at a time, using a low speed. Add the grated lime peel. Pour into the pie tin and bake in a preheated oven at 180°C, for about 12 minutes. Leave to cool, then top with grated coconut. Put under a hot grill for a close-guarded minute to brown.
